Recipe for Danish Christmas Cookies, "Pebernødder", from 1949
Ingredients:
500 g flour, 250 g sugar, 1 dl cream, 250 g butter, 1 tsp cinnamon, 1.5 tsp ground ginger, 1 tsp baking soda, 0.5 tsp baking powder, a pinch of pepper.
Mix all the ingredients together in a large bowl until well combined. Divide the dough into smaller portions, and roll each into a long strip. Cut the dough into small pieces about 1.5 cm thick, and roll them into balls. Place the balls on a baking tray lined with parchment paper. Be careful not to make them too big as they will rise in the oven.
Bake them in the oven at 200°C for about 10-12 minutes.
